Fluffy Pancake Mega Mix

Preheat pan or griddle on medium heat (or a touch lower).

Pancake batter instructions.

Pour dry mix into a mixing bowl, mix gently and then add:

• 4 eggs

• 3 1/2 cups of water (or 3 cups for thick pancakes)

• 1/4 cup of avocado oil

Mix on medium low speed until well combined, scraping the bowl as needed.  Let the batter sit for a few minutes to thicken.

Use as you would any pancake batter. 

These freeze well and are excellent eaten frozen (my daughter loves them this way!).  Pancakes can also be stored in the refrigerator and served crispy and warm from a toaster another day!
